A veritable institution in Japan and especially in Osaka where it originates, okonomiyaki (お好み焼き) is a specialty halfway between a filled omelet and a pancake. It can be eaten in many popular restaurants across the country. Okonomiyaki means “what you like grilled”.
All okonomiyaki is made from a base: a mixture of wheat flour, egg, fish broth, and white cabbage. The Osaka-based often additionally contains nagaimo, a type of yam. Various ingredients can then be incorporated into the batter or just added on top: pork, egg, cheese, cuttlefish, bonito, seaweed, shrimp, spring onion... etc. The galette thus prepared is then cooked on a hot plate ( teppan ), either in the kitchen or directly on the table in front of the consumer. The final dish is then topped with sauce, mayonnaise, or okonomi sauce.
