The delights of the north
The capital of the island of Hokkaido is renowned for its ramen . The Japanese associate Sapporo with the recipe for miso ramen , a variation typical of this region.
- Heibon Kujira-ya
Located south of town, this unpretentious little ramen restaurant draws crowds. His speciality ? The sakana karamiso ramen ; a delicious recipe based on fish broth and spicy miso . It is composed of three slices of tender meat ( chashu ), an egg and mushrooms instead of bamboo shoots ( menma ). In addition to all this, a dozen small shrimp will complete this comforting winter dish. Count 800 yen (around €6) for a sakana karamiso ramen . You will also find on the menu the classic miso ramen (spicy or not; 700 yen/€5), as well as a tomato and cheese ramen.
- Buta King
It is in downtown Sapporo, in Fushiko, that you will find the Buta King restaurant. This establishment takes up the challenge of filling the stomachs of the greediest among you! For just under 1,000 yen (around €8), you can enjoy this giant ramen garnished with 3 to 6 slices of chashu , lots of garlic and a mountain of bean sprouts ( moyashi )! Be careful though, as this restaurant only serves miso ramen . Moreover, it is in line with stores in the " jiro râmen " spirit; a subtle recipe from the mixture of pork broth and soy sauce, topped with pieces of fat. Finally, note that the wait can sometimes be long , given the popularity of this type of restaurant (from 30 min). Price: from 780 to 1,080 yen (from 5 to 8€).

- Ebisoba Ichigen
Among the many ramen restaurants in the northern capital, Ebisoba stands out thanks to its specialty: ramen with shrimp broth . The brand would use no less than 60 kilos of sweet shrimp ( amaebi ) per day to produce this marvelous slightly sweet and iodized broth. On the menu, you will have the choice between ebi-miso broth (shrimp and miso broth), ebi-shio (salty shrimp broth) and ebi-shoyu (shrimp broth and soy sauce). As in any ramen , the dish comes with a slice of chashu , negi (Japanese leek), and an egg. On top of that, crispy shrimp seasoning and deep red shrimp powder are added to it. Finally, for those who will not have the opportunity to visit the city center, an Ebisoba is available at Chitose airport. All the ramen are at the single price of 790 yen (about 5.90€).

Located on the 10th floor of the ESTA mall, part of the Sapporo Central Station complex, this ramen 'theme park' offers you a diverse selection of typical ramen from all over Hokkaido! Paradise for undecided gourmands! These specialties include miso (Sapporo), soy sauce (Asahikawa) and salt (Hakodate) broths. The food court/theme park has 8 different restaurants and a souvenir shop.
- Shirakaba sansô : miso ramen , infused with sesame oil and garlic. 800 yen a bowl (6€).
- Misono : ramen with miso , served with "Char Siu" pork and ginger. 800 yen.
- Ajisai : typical ramen from Hakodate, with salty and clear broth ( shio ). 780 yen.
- Yoshiyama shoten : miso ramen , flavored with sesame.
